I cannot emphasise this enough: become a member of the Coeliac Society of Ireland.
They do amazing work, including providing an online forum for coeliacs to discuss their experiences and producing a rigorously maintained gluten free guide to food in Ireland. Many Irish coeliacs describe this little book as their “bible”, and with good reason.
